Fungal Factors in Food Products Deterioration

Food deterioration could be defined as the excessive proliferation of microorganisms, the decaying or undesired decomposition of food due to other natural causes (physical or chemical changes). There are various living and non-living organisms that could cause deterioration in foods. Microorganisms, the living causes, are primarily responsible for the deterioration in most of the food products. Fungi are the living organisms with significant effects on microbial deterioration. The present study provides extensive information on the fungi that globally cause deterioration on food products and the mycotoxins produced by these fungi.
